Question 1: How many liters of beer can be filled in this fermenter? Question 2: How many kilograms of yeast can be produced after fermentation? Question 3: How many kilograms of dry yeast can be produced after fermentation? Answer to question 1: Side wall height=9.4m-3.6m=5.8m Volume of side wall: Vz=Ï€r2h Vz=3.14x2.1x2.1x5.8=80.31m3 Volume of conical bottom: Vk=1/3Ï€r2h Vk=1/3x3.14x2.1x2.1x3.6=16.62m3 V=Vz+Vk=80.31+16.62=96.93m3=969.3HL Answer to question 2: It can produce 1.5-2.5kg pulpy yeast per hectolitre beer. How to protect beer from external factor affecting In addition to brewing techniques, there are also many external factors affecting beer quality and stability, such as temperature, time, light and mechanical vibration etc. 1.  Temperature The beer should be stored with low temperature. Beer aging speed will be double for each 10℃ rise in temperature. So, it is necessary to control the external temperature strictly during storing and transporting in order to 100% guarantee there is not aging flavor when consumers drinks. In laboratory, the aging degree can be reflected by measuring aniline amount. 2.  Light The beer would produce MBT if exposing light with 350-500nm. The MBT has bad sulphur smell. Its flavor threshold is lower than 0.0001mg/L and it is generated by dissimilation of α-acid in hops, which is harmful for beer flavor. Beer Freeze in fermenter Does beer in fermenter have risk of freezing? It's actually a common misconception that alcohol liquid doesn’t freeze. Alcohol liquid does freeze, so does beer in fermenter. There are two main factors causing beer freeze. The first factor is that the coolant temperature is too low. The coolant temperature had better keep between 4℃ and -6℃, the lowest temperature can not exceed -8℃. In some breweries, the coolant temperature reaches -15℃, which might freeze beer in fermenter and affect final beer quality and stability. The second factor is that the design of cooling jacket is not very reasonable and the outside temperature is too low. The coolant inlet should not be opened on low temperature area of fermenter. How to do step infusion with PID and PLC control Step infusion is a common brewing method in many microbreweries. It means the mash temperature would increase and keep in various stage. Take a example. There are four stages for step infusion. Stage 1: 30-35℃ for 30 minutes Stage 2: 55-65℃ for 30-60 minutes Stage 3: 65-68℃ for 30-60 minutes Stage 4: 76-78℃ for 10 minutes For PID control , you need to set up target temperature before every stage and control the time by yourself. That is to say, before stage 1, you should set target temperature 30-35℃. Then wait the mash being heated to 30-35℃. After that, calculate the time to keep the mash under 30-35℃ for 30 minutes. Next, set the target temperature of stage 2, 55-65℃ and wait the mash being heated to 55-65℃. The following process will be similar with sage 1.                                 HSA-Hot side aeration Nowadays, there are having a lot of talk about hot side aeration(HSA) as HSA has been an important focus among brewers. Hot side aeration can occur anytime the wort is hotter than 80°F. It includes mashing, lautering, wort boiling and whirlpool. It will allow oxygen to chemically bind to various wort compounds and it will not be affected by the subsequent boil. Over time, these compounds will break down, freeing atomic oxygen back into the beer where it can oxidize the alcohols and hop compounds producing off-flavors and aromas.
